Hello Garrett,
VPS mirroring involves 2 VPS's of the same configuration which are setup on such a way that if one of the VPS's fails due to some reason, the other VPS takes it's place ensuring 100% uptime guarantee to the websites hosted on the VPS's
The data on the first VPS is transferred on the second VPS at regular intervals so that if the first VPS fails due to some reason, the second one has all the data

Well thats gonna be pretty useful. Out of curiosity, is this kind of mirroring possible on VPS's across different datacenter's?

Most probably No.
The reason for this is the fact that mirroring involves the switch of IP's from the primary server to the secondary server if the primary server goes down. If the VPS's are setup in different datacenters, the switch of IP's won't be allowed by the datacenters and hence mirroring of the VPS's setup in different datacenters is not possible.
Hope this helps..

It sounds great to have 100% uptime of your website. About the data transferring interval, when will the last update in the primary server be transferred to the second one (every day, every weeks, or...)?

Nope, the data transfer in the VPS mirroring solution is done much faster than that :D
The data which is under the home directories of account is configured to synchronize after every 15 minutes while the configuration files are configured to synchronize after every 30 minutes.

Cloud hosting can be an ideal choice for you if you are looking forward to achieve 100% uptime guarantee for your sites and applications. Cloud hosting plans are created using VMWare which offers better performance and high availability as it includes features like Fault Tolerance, Hot Add, Distributed Resource Scheduler, Distributed Power Management, Storage VMotion etc.
