... does it also include the operating system and the control panel? I just noticed that the space being used on my VPS doesn't match the total space used for hosting, so all the extra space is probably used somewhere. Is our total hard drive space also being used for the OS and control panel? Just curious...

Yes, the total disk space on your VPS does include the space taken up by the operating system and control panel. It doesn't take up much space, though. A typical OS + cPanel installation usually takes up to 1 GB or less, which should leave you plenty of space for other things.

Thanks for the info, you guys! I was kinda wondering about that since my only prior experience was with shared hosting and in the disk space in that is all reserved for the site content and databases and stuff.
