VPS Hosting

Within the next month I plan to launch three related websites:

1) A web manga (Japanese comic strip)
2) A fan site with, eventually, a fan forum
3) An e-commerce store

While initial hit rates will be light, the sites have the potential of developing substantial traffic and could ramp up quickly.

I'm familiar with, and would prefer, to run these sites on Debian 3.1 with, maybe, an upgrade in the near future to Debian Etch.

The manga and fan sites will be run on a Python web-framework using, initially, the Karrigell web server. If Karrigell proves inadequate with load, I may switch over to Apache, but have no experience with it. The e-commerce site will run on Squirrelcart, which, in turn, runs on PHP and MySQL. I will probably have Squirrelcart install these packages for me. I haven't selected forum software yet, and am open to suggestions.

My Linux administration skills are modest, but functional.

Questions:

1) Which of your plans do you think would be most appropriate for me?
2) Can I run all three sites on one virtual server, or would it be better to parse them into two or three virtual servers?
3) Do I have root access to the operating systems?
4) Can I communicate with and manage the servers through SSH?
5) What's the best way to run traffic monitoring software without degrading site performance?
6) What traffic monitoring software would you recommend?
7) Can I buy technical help in setting up the sites until they are running smoothly? How much would this cost?
8) How can I best assure that the sites are secure?
9) What is the best way to deal with back-up and recovery?
10) What's the best way to manage testing/staging sites?
11) Is there a way of starting with a less-expensive plan with lower resources but ramp up quickly if the need arises?
12) What most distinctively distinguishes you from the many other hosting services?
13) What's the maximum load factor that you would allow on your physical servers; e.g. how many other users would I expect to be sharing the physical hardware with? Is is possible for some else's resource demands to hog out mine (or vice versa)?
14) Do you provide a "grace period" while the sites are being set up?
15) What other thoughts/recommendations might you have for me?

Sorry for the many questions but, as you can imagine, this is a very critical decision for me.
