Default For any programmer out there

I have a pretty simple question for you. If someone hires you to create something for them, and pays you for the work you did, it is theirs once the job is complete and you have done your work, correct?

I think of it as someone writes a book for you, you pay them, the book its theirs to do as they wish. Would this not apply in the programming world as well?

I think there is a big difference between writing a book and programming.
