Absolutely, I've seen many clients keeping dedicated servers as their hosting option for their personal websites. They do this as either their sites are

e & use lots of resources, or if they want additional security to be implemented, such as having them hosted behind a hardware firewall, VPN connections, customized racks, switches, network adapters, etc.. Or if they dont want to be hosted amongst other neighbors... but finally, choice is yours ;)
