Honestly, if you know Linux I highly recommend it. You can also consider the Webmin control panel to help you administer your Linux server.

If you don't know Linux at all then you might should go with Windows if you are familiar with that.

I'd recommend setting up a centos Linux server at home in a virtual machine and uncheck installing any Desktop when you install it then see if you can manage it with nothing more than a shell login.
